The calculation is just that rate against the value of the orders going through them. What makes it worth doing is that the number is monthly and recurring, and most owners have never multiplied it out. A hundred and fifty orders at thirty dollars is four and a half thousand dollars of food; at thirty percent, the commission on it is more than most restaurants spend on everything else in their marketing put together.
The break-even line at the bottom is the honest part of this. It is not asking you to leave the marketplaces — they genuinely reach people who have never heard of you, and dropping them overnight is a bad idea. It is asking how many of your regulars would order direct if there were somewhere direct to order, because those are the orders you are paying a finder's fee on to a company that already found them for you a year ago.
